What is the origin of a Gose?

Gose is an “old style” of beer from Germany. It historically has been sour, salty, and spiced with coriander.

Isn’t the brewing process a bit different for Peach Dodo?

Yes, there are actually two fermentations that go on. The first is a souring of the beer, done in a fermenter into which Lactobacillus was added.

What are the notable characteristics of this beer?

Very clean lactic sourness—like yogurt, slightly salty and fruity with a subtle complexity to it.

What makes you want to drink this beer?

If you like sour beers and you like to quench your thirst, this is the beer for you!

Appearance: Light yellow, clear—which is unusual for the style— medium high carbonation, moderate head retention.
Smell: Sour clean lactic aroma with a peachy, slightly fruity undertone and no hop aroma.

Taste: Moderately sour from a hefty presence of lactic acid. Sourness is complemented by the fruity flavor of peach—very light. Moderately grainly, medium-low salinity.

Mouthfeel: Light body and medium carbonation.

What foods would pair well with Peach Dodo?

Poke, which is a Hawaiian version of sashimi—would also go well with any sushi or ceviche, also oysters on the half shell.
